Does anyone know how to scale images properly (without squishing said images contents), to fit the 640×440px limit on the “detail” side of things?

Check out the “seascapes”, or “ethnic artwork” sections to see the problem I’m running in to on scaling properly. Due to the size of the source images I have, scaling them in PS CS5 tends to get messy, the contents get all squished and knocked outta proportion.
I work for (Eric White Studio) as webmaster, designer and SEO , and Mr. White doesn’t approve of that method of scaling his art work. And I don’t blame him for it, he knows how his artwork is supposed to look, plus the only way I know to scale images down looks terrible in this case…
I hope this has made some sense. I’m just curious about how to take an image for example with “1028×1200px” dimensions down to the limit of “640×440”, if possible.
Any input would be awesome, because currently the site is done, and I have only a few images left to tweak, and the next phase of business can start.
